Cashew Milk!

I promise I’m not becoming a super health nut (har har). But a friend wrote glowing reviews about making cashew milk on Facebook, and curiosity got the best of me. Plus, the recipe was promisingly simple: 1) Soak cashews for 4 hours, then 2) Add water and some simple flavoring and blend.

As she wrote about various types of nut milk, all-capped words like “SO GOOD!” and “AMAZING” stood out to me, not to mention “It tastes like chocolate milk even without the chocolate!!” (hazelnut milk, that is). Well if that doesn’t pique your interest, I don’t know what will.

Plus, I had this huge tub of cashews I had bought at Costco to make these grain-free waffles (thanks to a tempting photo from a friend on Instagram) and had plenty to use up. So last week, I threw a cup of cashews into some water and the next morning, I whirred it up to make the lovely bottled concoction pictured above.

It was YUMMY! Creamy, cool, refreshing. It reminded me a lot of how I like to jazz up my vanilla almond milk, since I add honey, cinnamon, and vanilla extract to that, too. But much creamier. Although I’ve never attempted a nut milk from scratch before, it was a much easier process than I had expected. No straining or anything. That means few dishes, little hassle, and no waste! I thought my Vitamix had something to do with the super creamy and smooth consistency of the milk, but the original author of the recipe says any ‘ol blender will do.

I thought it’d be a one-time recipe experiment, but after I finished the last glass, I found myself craving more, so not only did I blend up another big batch and finish up the last of my cashews, but I got a WHOLE NOTHER TUB of the nuts so I could keep going! I’ve made several batches now. I’m kind of addicted to the stuff now. Who would have thought?? I feel healthy adding a glass to my morning breakfast– it’s easy protein and tastes darn delicious! I recommend. Try it and let me know what you think!

Summer Drink RoundupIt is hot, hot, HOT in the Bay Area this week! I was at the farmer’s market this morning and found myself sweating buckets before I finished buying my first bag of white nectarines! In times like this, I find myself mulling over which beverage I’d find most refreshing: Milk tea? Iced coffee? Fresh watermelon juice? Frappucino? Smoothies? Of course, ice cold water is probably the cheapest and healthiest, so I most frequently turn to my trusty Hydro Flask which keeps my water ice cold all day. (It’s my new water bottle winner.)

But it only temporarily satiates the desire for something chilly, sweet, and delicious slipping down my throat. So whenever I am able to carve out some time, I love to treat myself and Ben and our friends to one of these delectable beverages! They are each a favorite in a different way, so I highly encourage you to give them all a shot sometime! Now for the summer drink roundup:

Mmmm heavenly salted caramel hot cocoa-- so easy to make!

Guys, I’ve been getting some serious writer’s block. I have plenty of material. Plenty of ideas… so many ideas. On teaching, on parenting, on marriage… and of course, food. I have stories and even some portions written out… but my brain is just not up for the task of pulling it all together into coherent pieces right now. PLEASE FORGIVE. Please stay. It’ll come back to me soon!

In the meantime, can I just share a super easy and super delicious recipe for salted caramel hot cocoa? It’s the ultimate warm-ya-to-yer-toes, rich, luxurious bowl of comfort. Mmmm.

Yummy HK Style Milk TeaI LOVE MILK TEA! 🙂

I love cold Taiwan style milk tea AND hot Hong Kong style milk tea. As long as there is a strong tea flavor and it’s not too sweet, I love it. A few months ago, I found a Taiwan style milk tea recipe I love, but had yet to nail the HK-style one.

It’s not for lack of trying. I have tried a number of “silk-stocking” milk teas using condensed milk, evaporated milk, Lipton tea, Ceylon teas, and other blends of teas, based on various recipes I found online. None were to my satisfaction. My biggest problem was that I couldn’t hit the right tea flavor, so I gave up. Various people had told me the secret was to use Lipton tea, but um… there are several varieties of Lipton tea, so without a specific TYPE of tea, I was still pretty lost.

Uber Fresh Juice Yum

Last week, my friend Kevin dropped off several bottles of juices for me to try— what a treat! I felt so spoiled, and thoroughly enjoyed the fact that we were instructed to finish them all within a few days. Normally, I’d spread out such an extravagance over days and days… but hey, I had to follow the “Best by 8/22/14” sticker, right? So I gulped away, day and night, and drank to my heart’s content. It was GREAT!

Then I finished the last one, and there were no more in my fridge.

I live in California. There’s a lot to love, from the weather to the diversity to the FOOD! The food, my friends. The food. And it’s not just me– these people agree that when it comes to food, California is tough to beat! I was particularly impressed to learn that California produces half the nation’s supply of fruits, vegetables, and nuts! WOW! That makes the whole “eating local and fresh” thing so much more enticing!

I’m sure you’ve heard it before: eat organic, eat local, eat fresh. It’s not just for hippies or hipsters anymore– groceries stores everywhere are reflecting the increasing demand for fresh, local, and organic products. I can get behind that. And so can a lot of other people, apparently. For example, over the last few years, I’ve been hearing more and more about juice bars: cafés serving freshly prepared fruit juices. It’s a thing. And why not? There are few things more satisfying than sipping exquisitely fresh, tasty, and healthy juice!

I have a feeling most of my readers are not from California, though. Wouldn’t it be nice to get some fresh-pressed, made-to-order, organic, locally-sourced, raw, California-sunshined juice delivered to your doorstep… tomorrow?

 refreshing watermelon juice

Have you ever been in China in the heat of summer?

It is insanely hot. And humid. Like, I walk outside and my shirt begins sticking to me in a matter of seconds. The kinda humid that makes you want to stay in the shopping mall just to avoid the icky sticky humid air that awaits outside. The kinda hot that leaves you constantly searching for the next cool, refreshing drink you can find to indulge in.

Like watermelon juice.

Mmm-mmm watermelon juice! Chilled fresh watermelon juice. This stuff tasted like the nectar of the gods. I would get excited from the moment I put my damp palms around the cool cup, wet with condensation. I always finished it too quickly, but luckily it was fairly inexpensive there. In the states, I see the same small-sized cups of the stuff going for $4! Seriously? I could buy a whole, big watermelon for $4 and make eight cups of it!

So I did.

Nothin’ like a cold glass of watermelon juice for a hot summer day!
