Did you know that vanilla extract is just vodka infused with vanilla beans? Yes, really. And now that Costco sells vanilla beans, making your own vanilla extract is even cheaper than buying it at the store!

Sounds a little too easy, but there it is. Sometimes the simplest things are the best.

Vanilla Extract
Step 1. Slice a vanilla bean or two in half lengthwise, then place in an air-tight container such as a mason jar.
Step 2. Fill the container up with vodka (about a cup).
Step 3. Let it sit for 6 weeks, shaking once a week.
Store in a dark, cool place. Really, that’s it! It should last for at least a year. If you have a bunch of vanilla beans, then just throw it into the vodka bottle directly and relabel the whole thing! I imagine it’d add an especially nice flavor punch to a hot cup of hot cocoa or in a creme brulee. Yum!
